Every loaf at Hop-Yo begins the night before — a slow, patient fermentation that rewards those who show up early. We bake, stock, and serve from 36 Main St, right in the heart of Hopkinton.

Every morning, starting Friday
At Hop-Yo, bread isn't rushed. Our sourdough ferments for 72 hours in temperature-controlled proofers, developing the complex, tangy flavor and open crumb structure that fast production can't replicate.
The same patience extends to our grocery selection — every olive oil, aged cheese, and imported staple is chosen for what it brings to a real kitchen, not a display shelf.

"The sourdough here changed how my family thinks about bread."
— A Hopkinton neighbor
Hop-Yo sits on Main Street because that's where the people who need good bread already are. We opened with a simple conviction: that a neighborhood bakery should feel like a neighborhood — familiar, unhurried, and honest about what it makes.
Our bakers arrive before dawn. Our grocery shelves are stocked the way you'd stock your own — with things you'd actually use, not things that look good in a catalog. If we wouldn't serve it to our own family, it doesn't make it into the case.
